The Provo has some good fishing and plenty of public access. However, it gets hammered, especially on the weekends.

If you are looking for a guide, try Four Seasons Fly Fishers out of Heber, they fish most of the areas waters. Lots of water is open all year long within 1 hr of Park City because of all of the dams.
Provo and Weber are good bets, check some websites for the Weber River, it holds lots of large fish and has good access along the roads

Better yet, stay at Johnson Mill b&B in Midway UT and fish the pond or the stream running through the land

Good Luck

I have fished in the Park City area a few times. I have fished both the Weber and the Provo and had much better luck on the Provo. My two favorite areas are on the middle section in Heber City and the lower section near Bridal Veil Falls. On the middle section I have had good luck parking by the bridge near the middle of Heber City and working upstream. The spots near the road are heavily fished so I try to stay away from them. On the lower I park on the road that is next to the river below the falls and fish upstream. One interesting thing is that everybody was recommending size 22 and 24 size flies but when the action got slow, I switched to a size 14 orange stimulator and had a fantastic afternoon with 15"+ browns.

Good Luck!
