Here in Louisiana, we're spoiled...a lot of choices. Most people fish saltwater around here, and most would vote for speckled trout...they're great to eat, but if I had to pick a "best fish", it would definitely be flounder. Nothing beats a nice flounder fillet stuffed with crabmeat. Black Drum and redfish are good too, as long as they aren't too big.

As for freshwater, sac-a-lait (crappie), bream and catfish are good. Most of my freshwater fishing is catch-and-release, though (bass and trout). With all the high-population saltwater species around, that can take the heavy fishing pressure, why bother?
