Default Many Thanks ijsouth!

ijsouth sent us some wonderful chocolate pralines..minus vanilla (since I am allergic)! Ian, I put them out for everyone to enjoy today...the only thing left was dust.

Thank you!

Paula

You're quite welcome...sorry I couldn't get to them until after Christmas - I'm glad we're past that (now we're into King Cake season).

If anyone's interested in making some - they're ridiculously simple as far as ingredients are concerned (they're basically nothing but cooked sugar), but it is a bit labor-intensive in the end stages. Here's what you need:

2 Cups Light Brown Sugar
1 Cup Dark Brown Sugar
2 Packages Vanilla (or Chocolate) pudding (not instant)
1 Cup Evaporated Milk
2 Tablespoons Butter.
Splash of Jack Daniels

Make sure you have a good candy thermometer.

Combine all the ingredients in a heavy saucepan, over medium-high heat, stirring constantly until the sugar has completely dissolved. Then, continue heating without stirring until the mixture reaches 238F (soft ball stage). At that point, remove from heat, and stir in pecans (about a cup). Beat mixture for at least 3 minutes (this is the tiring part). Now, beforehand, put out wax paper on a countertop or table. Lay out mixture, about a spoonful at a time, on the wax paper to cool/solidify.

Generally, if you do everything right, they'll start to solidify fairly quickly - within a few hours, they should be good to go.

That sounds like a great resolution buster. I think I'll give that a try.
